The most thorough option: back up and erase
If a repair is major, if you’re leaving the phone overnight, or if you simply want the question off the table, the most complete protection is to back up and then erase the phone before handing it over. A wiped iPhone, restored from your backup once you get it back, means the technician works on a device with none of your data on it. There’s nothing to browse because there’s nothing there.

Photos you keep on the phone: an extra lock
Erasing before every repair isn’t always practical, and plenty of the time you’ll hand over a phone that still has your data on it. For the photos that matter most, it’s worth having a layer that stays shut even then.
